Made by an Artisan cheesemakers tucked away in the heart of Cornwall who have lovingly crafted a range of superb Cornish soft cheeses!Boy laity presents a round shape, characterized by a white, light, bloomy, and edible mould-ripened rind. As the cheese matures, the white rind becomes less dense, and subtle light brown colorations may appear. The cheese ripens over time, initially retaining a core at the beginning of its lifecycle.
It has a distinct earthy, mushroom aroma emanates from the rind. Upon slicing, the interior reveals a fresh and creamy cheese with a lactic scent. As it ages, the aroma intensifies, developing some ‘cooked cabbage’ volatiles typical of Camembert.
It’s flavour profile is bold and creamy, with lactic flavours that meld with the earthy, mushroom notes from the rind. This cheese remains robust throughout its life, with complex flavors intensifying alongside its rich, indulgent creaminess. A strong and distinct character emerges, with notes of ‘cooked cabbage,’ a hallmark of high-quality Camembert.
